Since temperatures are rising again in Belgium, I decided it would be only appropriate to post a recipe that screams summer! This vegetable oven dish will fill your kitchen with a mouth-watering Mediterranean aroma that will trick you into thinking you’re on a terrace in the south of France!

Amount: 4 servings
Prep. time: 30 to 40 minutes (depending on your knife skills ;) )
Oven time: 50 minutes up to an hour
Difficulty: easy

You'll need:
  • 3 peppers (I used a red, a yellow and a green pepper.) 
  • 2 courgettes (zucchini’s) 
  • 12 cherry tomatoes 
  • 6 large or 10 small carrots 
  • 4 large potatoes 
  • 1 large union 
  • 2 cloves of garlic 
  • thyme (or herbes de Provence are also delicious!) 
  • salt and pepper 
  • olive oil 
  • a large oven tray or two smaller trays

Let's get started!

Thoroughly wash your peppers, courgettes and cherry tomatoes.

Peel the carrots, potatoes, union and garlic.

Chop up all your veggies: peppers in strips (julienne), courgettes and carrots in slices, potatoes in small cubes and cherry tomatoes in quarters. I usually cut the union in rings or small dices. Oh and I use a garlic press for the cloves.

Now’s also the time to preheat your oven to 180°C/360°F.

Sprinkle on some thyme and salt and pepper to your liking.

This is the part where it gets tricky. Mix all the vegetables and herbs together. It’s not that easy if your tray is completely full, but just try to carefully mix it up a bit!
Next, add a generous splash of olive oil. Don't be shy, you want all the vegetables to have a thin coat.

Place the colourful deliciousness in the oven for at least 50 mins or until the potatoes are fully cooked.
(I usually put it in the oven for an hour but if you don’t want to wait that long, you could boil your potatoes first. Add the potatoes to the chopped vegetables and put everything in the oven for about 30 minutes.)

After the vegetables have been in the oven for 30 minutes, give them another good mix.

Take your veggies out of the oven and serve!

I just realised that this would also be amazing with some garlic bread or with toasted baguettes!
